Summer Fruit Popsicles

These summer fruit popsicles are the perfect treat for a hot day. They whip up super fast and are way healthier than what you can pick up in the store.  You can use any fruit or even other ingredients like yogurt or chocolate. My favorite combo is strawberry and watermelon popsicles. They are both bright and delicious summer fruits and they are amazing together. I also like to add a little spice by layering in some Chamoy into my pops. 

Pop Molds and Alternatives

I use basic silicone ice pop molds that you can get for a few dollars online. These silicone molds on Amazon are my favorite to use:

However, if you don’t have any and aren’t willing or able to buy molds, you can use the reliable ice trays and toothpicks trick. 

What is Chamoy?

It’s a very popular condiment made from dehydrated fruit such as apricot, mango or plums (or a combination of these), chili powder, salt, sugar, and a little citrus juice. It is sweet, sour, salty, spicy, and a little tart…..the perfect combination of flavors! Chamoy is from Mexico but its exact origins are unknown and there are a few alternatives in other countries such as China and the Philippines.

Since Chamoy is made using fruit it also pairs extremely well with fresh fruit. One of my favorites is mango and chamoy, but watermelon is another popular combo. It works very well in these summer fruit popsicles!

Summer Fruit Popsicle Freezing Time

Depending on the ingredients, at least 4 to 6 hours is needed to turn the mixture from liquid to solid. Overnight freezing is the safest bet, and something to look forward to the next day! 

Because they are fresh fruit, they will only keep in the freezer for about 2 weeks at most. I can guarantee they won’t last that long though!

Tips and Tricks

  • Popsicles are a great treat for kids, but they can sure be messy! To prevent the inevitable melted popsicle drip from getting everywhere, cut a small slit in the bottom of a cupcake liner and place the popsicle stick through the bottom to catch the juice.
  • When you want to grab a pop and it’s not coming out you can run a warm knife around the edges to help release it. 

How to Pick a Good Watermelon

There are 3 things I look for in a good, sweet watermelon. How heavy it is, the sound it makes and the size of its yellow spot: 

  • The heavier the watermelon the more liquid it’s likely to contain. Which means it’s gonna be extra juicy. I test this by picking up several similar sized watermelons and compare their weight. 
  • The sound is just something my family has always done. Knock on the watermelon and see how hollow it sounds. The more hollow the sweeter the melon. I’m not certain why this works, but it has never failed me before. 
  • The yellow spot indicates the part of the watermelon that was on the ground. The bigger it is the longer the melon has time to ripen on its vine. 

Summer Fruit Popsicles Step by Step:

Peel and cut the watermelon into small chunks. 

Freeze completely in an airtight container. About 2 hours minimum.

Blend the strawberries, lime juice, honey and salt. 

Then add the watermelon. You might need to do this in batches depending on the size of your blender. Blend until nice and smooth. If the mixture is too thick, add a little water.

Ready your popsicle molds. You can layer the watermelon mixture in the mold with Chamoy or Tajin if you’d like. It adds a wonderful spicy contrast.

Place in the freezer and freeze completely. This usually takes at least 2 hours. Pull out your pops and enjoy a clean and refreshing treat!

Ingredients
  

  • 1/2 cup Water
  • 5 cups Watermelon, seedless
  • 1 1/4 cups Strawberries, hulled and quartered
  • 1/2 cup Honey
  • 1 tablespoon lime juice
  • 1 teaspoon salt
  • Chamoy or Tajin, optional

Instructions

Notes

*You can skip the first freeze step for the watermelon but, it does speed up the overall freeze time for the pops.
